Tuna & Tomato Burger
Ingredients:
- 2 cans of tuna (drained)
- 1/2 cup breadcrumbs
- 1 egg
- 1 small onion (finely chopped)
- 1 clove garlic (minced)
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tbsp fresh parsley (chopped)
- Salt and pepper to taste
- 2 large tomatoes (sliced thick for “buns”)
- Lettuce leaves (for serving)
- Optional toppings: avocado slices, red onion, or cheese
Instructions:
- Prepare the Tuna Patties: In a large bowl, combine the drained tuna, breadcrumbs, egg, onion, garlic, mayonnaise, Dijon mustard, lemon juice, parsley, and a pinch of salt and pepper. Mix everything until well combined.
- Shape the Patties: Form the tuna mixture into burger patties, about 1/2-inch thick. You should get about 4 patties from this mixture.
- Cook the Patties: Heat a non-stick skillet or grill pan over medium heat and lightly grease with oil. Cook the tuna patties for about 3-4 minutes per side, until they’re golden brown and cooked through.
- Assemble the Burger: Instead of traditional buns, use thick slices of fresh tomatoes. Place one tomato slice on the bottom, add a lettuce leaf, the cooked tuna patty, and any other toppings you like (avocado, red onion, or cheese). Top with another tomato slice.
- Serve: Enjoy your healthy and fresh Tuna & Tomato Burger with a side of salad or fries!
