Tuna & Tomato Burger

Ingredients:

  • 2 cans of tuna (drained)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 small onion (finely chopped)
  • 1 clove garlic (minced)
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley (chopped)
  • Salt and pepper to taste
  • 2 large tomatoes (sliced thick for “buns”)
  • Lettuce leaves (for serving)
  • Optional toppings: avocado slices, red onion, or cheese

Instructions:

  1. Prepare the Tuna Patties: In a large bowl, combine the drained tuna, breadcrumbs, egg, onion, garlic, mayonnaise, Dijon mustard, lemon juice, parsley, and a pinch of salt and pepper. Mix everything until well combined.
  2. Shape the Patties: Form the tuna mixture into burger patties, about 1/2-inch thick. You should get about 4 patties from this mixture.
  3. Cook the Patties: Heat a non-stick skillet or grill pan over medium heat and lightly grease with oil. Cook the tuna patties for about 3-4 minutes per side, until they’re golden brown and cooked through.
  4. Assemble the Burger: Instead of traditional buns, use thick slices of fresh tomatoes. Place one tomato slice on the bottom, add a lettuce leaf, the cooked tuna patty, and any other toppings you like (avocado, red onion, or cheese). Top with another tomato slice.
  5. Serve: Enjoy your healthy and fresh Tuna & Tomato Burger with a side of salad or fries!
