Decadent Chocolate Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup cocoa powder (unsweetened)
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1 cup milk (or buttermilk for a richer flavor)
- 2 tbsp melted butter (plus extra for greasing the pan)
- 1 tsp vanilla extract
- 1/4 cup chocolate chips (optional)
For the Chocolate Sauce:
- 1/2 cup heavy cream
- 1/2 cup dark chocolate (chopped)
- 1 tbsp butter
- 1 tbsp maple syrup (optional for sweetness)
Instructions:
- Make the Pancake Batter: In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, mix the egg, milk, melted butter, and vanilla extract.
- Combine: Slowly pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix! Stir in the chocolate chips, if using.
- Cook the Pancakes: Heat a lightly greased non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface, then flip and cook for another 1-2 minutes on the other side.
- Make the Chocolate Sauce: While the pancakes cook, heat the heavy cream in a small saucepan over low heat. Once it begins to simmer, remove from heat and add the chopped dark chocolate and butter. Stir until smooth and glossy. Add a touch of maple syrup if you’d like a sweeter sauce.
- Serve: Stack the pancakes on a plate, drizzle generously with warm chocolate sauce, and add any desired toppings like fresh berries, whipped cream, or even a sprinkle of powdered sugar.
